Can you use rice flour for phirni?

I was going through a Phirni Recipe in a magazine recently which called for rice flour in the ingredients. I was like WHAT??!! Rice Flour? In a Phirni??? I couldn’t even imagine using Rice Flour in a Phirni. No offense for those who use it!!

As phirni is such a commonly made sweet at home, I have never checked the recipe before. Ok, maybe semolina or rava as a quick fix when short on time, but the real traditional and classic taste can only be achieved through proper soaking, drying and grinding of the Basmati Rice.

What is phirni recipe made of

The phirni is made of ground rice which is first soaked and dried. You can add in cardamom seeds and almonds while grinding the rice for enhanced taste and flavor.

The difference between kheer and phirni

The kheer is made with whole basmati rice, whereas the phirni is made with ground rice. The kheer, also known as payasam in South Indian, can be served warm or chilled. But the phirni is always served chilled.

Serving suggestions:

Serve the phirni recipe chilled garnished with dried nuts in small earthen bowls for the most authentic feel.

    • Rinse the Basmati Rice and soak it in water for at least an hour.
    • Drain all the water spread it on a paper towel or a large plate and allow it to dry completely.

Ingredients

  • 1 cup Basmati Rice
  • 2 litre milk
  • pinch of saffron
  • 1 cup sugar
  • 2 cardamom

Instructions

  • Rinse the Basmati Rice and soak it in water for at least 1 hour.

  • Drain all the water spread it on a paper towel or a large plate and allow it to dry completely.

  • Add the cardamom to the dried rice and grind in a coffee grinder or dry grinder together till it resembles a fine semolina or sooji or rava.

  • Boil milk along with saffron in a large pan and add the rice powder gradually while stirring. If you add all the powder together, it might form a lump.

  • Stir frequently till the rice is fully cooked.

  • Add the sugar and cook till it thickens and achieves your preferred consistency.

  • Serve chilled garnished with dried nuts.

Drying rice and Chilling time have not been included in the total time.

You can add in almonds and cashew along with rice to grind for enhanced flavor and taste.

For best results, serve the phirnirecipe chilled in a small earthen bowl.
