We are a taco family. Tacos are in my regular meal planning rotation. For instance, my husband has been on the pursuit for the best Tacos Al Pastor recipe for years. He has perfected them – however; more on that in another post! Last night I made Easy Ribeye Steak Tacos, and I want to share this recipe for you. It’s perfect for family dinners as well as easy entertaining.

I was inspired when I saw shaved thin ribeye steaks at the market, but it’s just as easy to slice a ribeye steak thinly and use it if that’s what you have on hand. If you are using steaks and slicing them, it’s a good idea to put them into the freezer for 15 minutes prior to prepping them. The steak will be much easier to cut that way.

With just a few simple ingredients dinner is on the table quickly, and there are happy bellies all around!

Prepping Your Ingredients

  • First, you want to mix together the rub for your meat. This is the seasoning for your steak tacos. Mix together chipotle chili powder, ground cumin, salt, pepper, and garlic powder in a bowl. Set that aside.
  • Next slice up your meat. Most importantly, slice thin, little strips.
  • Now rub the dry ingredients all over your ribeye steak. You will also add the juice of one lime to the meat – just be careful not to do that too far in advance. A half hour is fine. Too long in the lime juice and the steak will get mushy.

  • Cut your limes into wedges. After that, chop your cilantro, dice your cheese and get all of these ingredients as well as the salsas, jalapeños, and avocados into bowls or onto plates for serving.
  • If you’re entertaining with this recipe be sure to coat the avocados in a little lime before storing – or just wait until right before you serve to cut them. Above all, you don’t want them to get brown.

  • Here’s how to cook thin cut ribeye steak: heat a cast iron frying pan to a medium high heat. The steak for the ribeye steak tacos is so thin that it only take a minute or so to heat up. If the pan is hot enough and your meat is cut thinly enough you’ll only need to cook it for about 45 seconds on each side.

The result?

  • The result will be beautifully seared and tasty meat. As a result of the meat being thinly cut, you need to be careful not to overdo it. As soon as it is cooked to your liking, remove it from the fry pan, and just like that – you’re ready to go!

Adjustments for Easy Ribeye Steak Tacos

  • If your family doesn’t like raw onions you can still use onions – simply grill them first.
  • Add chorizo to tacos for something different.
  • Pour some Mexican crema over the top of your tacos. The addition of crema will result in a savory addition to your meal.
  • Chop up some fresh pineapple and sprinkle it over the top of your tacos resulting in a sweet tang in contrast to the meat.
  • Similarly to using fruit on top, you can use cheese or squeeze citrus. Regardless, you can really only enhance the flavors!

This Easy Ribeye Steak Tacos recipe will be the one you refer to again and again to get a quick, easy, and delicious meal on the table in only minutes!

Ingredients

  • 2 lbs shaved or thinly slice ribeye steak
  • 1/2 package corn tortillas
  • Cilantro - 1/2 cup, chopped
  • 2 limes cut into wedges
  • 1/2 block of queso fresco, cubed.
  • Avocado - 1 whole, sliced
  • 1 tbsp chipotle chili powder
  • 1 tbsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 tsp black pepper
  • 1 cup red salsa (optional)
  • 1 cup salsa verde (optional)
  • 1/4 cup diced jalapeños (optional)

Instructions

    Mix together dry spices.

    Slice ribeye steak into thin strips and rub with spices.

    Squeeze the juice of 1 lime over the steak (for no longer than a half hour).

    Prep remaining ingredients (slice limes, chop cilantro, dice cheese, slice avocados and pour salsas into bowls for serving).

    Warm corn tortillas on cast iron skillet sprayed with cooking spray for 1.5 minutes per side and pile for serving.


    Cook steak in cast iron fry pan for about 2 minutes total or until desired doneness.

    To Make Your Taco – add all of the ingredients into the tortilla and enjoy!


    Adjustments: diced onions, chorizo, pineapple toppings.
